Outstanding food and service are central to the experience Segara Marine offers to guests. The Sous Chef will work with the Chef to produce a variety of food suitable for all guests and will cater for people with specific dietary needs. The Sous Chef will ensure that all food preparation and presentation follow company guidelines regarding the meal plan. He/she is also responsible for maintaining general cleanliness and impeccable hygiene of the galley and food storage areas (including fridges, freezers and cold rooms)
The Sous Chef is responsible for the following:
1. Ensuring that the established meal plan is followed and that all 4 meal services plus snacks are provided daily.
2. Ensuring that the standards and procedures for the general hygiene are followed in the galley, food storage areas (including freezers, cold rooms, refrigerators, etc.) are maintained to Segara Marine standards at all times. Ensuring that all other crew who are involved in food preparation and service follow company standards for food hygiene.
3. Support the Chef to supervise all crew involved with food preparation and coordinate with any crew involved with the meal service.
